Zucchini bread

This nutrient packed zucchini bread is perfect with a salad, you can also bake it in the shape of muffins and eat a couple when you are on the go.

This nutrient packed zucchini bread is perfect with a salad, you can also bake it in the shape of muffins* and eat a couple when you are on the go.
This version is gluten free but you can use any flour you like.


INGREDIENTS

(serves 8 as a side, serves 4 as a main)

  • 4 medium/large size grated zucchinis
  • 4 organic eggs
  • 60ml of olive oil
  • 400g almond meal
  • 2 tsp chia seeds
  • 6 to 8 bocconcini
  • 1 grilled pepper* (optional)
  • 2 tsp of aluminium-free baking powder
  • salt & pepper
  • Chilli flakes

PREPARATION

  • Preheat the oven to 320F/160C
  • Combine grated zucchini, eggs and olive oil
  • Add almond meal, chia seeds, baking powder, salt, pepper, chilli flakes and mix well
  • Add sliced bocconcini and grilled pepper pretty evenly so you have a nice mix of colours
  • Place a baking paper on your tin and pour the mixture
  • Bake for 1 hour or until cooked
  • Enjoy with a green salad and a nice lemon or balsamic vinaigrette

*To make grilled pepper: start by charring the pepper over an open flame or on a hot grill until the skin is blistered and blackened. Then, remove the skin and cut the pepper into thin strips.

Zucchini = potassium, vitamin A, C & B6. It also contains magnesium and dietary fibres.  
Peppers = vitamin C & B6.
Almonds = dietary fibres, magnesium & good fats.
