It’s gluten-free so a great treat for people with celiac or a sensitivity to gluten

When I lived in Sydney, Australia a few years ago we went to a remote organic retreat in the Gondwana rainforest.

For the little story, chickens were roaming freely, there were a few goats and an angry goose who decided to chase me and my daughters around, while leaving my husband alone (he found the whole thing quite amusing).

Our hosts were great cooks so we had a delicious meal for dinner and they baked us a beautiful orange cake which inspired the recipe I am about to share with you!

You will need a bit of time to make it since the oranges (organic please) are to be boiled for a couple of hours. Except for that it is really easy to make!

Ingredients
- 2 organic oranges
- 6 beaten organic eggs
- 2½ cups of ground almonds
- ½ cup of sugar
- 1 tsp of aluminium free baking powder

Instructions
Boil the oranges for 90 to120 minutes
Remove the oranges from the water
Preheat the oven to 150C
Cut the edges of the oranges, blend them with the peel
Beat the eggs until they get foamy
Add the oranges, the ground almonds, the sugar and the baking powder to the eggs and blend all together.
Place a parchment paper on your cake pan so it’s easy to remove.
Put in the oven, check after 30 minutes
To check if it’s cooked, stick a knife into the cake and if it comes out clean it is cooked.
