Butternut Squash Soup

A super easy-to-make soup that’s perfect for any season! Serve it warm for a cozy meal, or enjoy it chilled in the summer. Its velvety texture makes it as versatile as it is delicious.

Ingredients:

  • 1 medium butternut squash (peeled, seeded, and cubed)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced) (optional)
  • 1 large carrot (peeled and chopped)
  • 1 apple (peeled, cored, and chopped) (optional)
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger (or fresh ginger, minced)
  • 1/2 teaspoon turmeric
  • 1 tablespoon olive oil
  • Pepper to taste
  • Fresh parsley or cilantro (for garnish)
  • 1 tablespoon lemon juice

Instructions:

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion, sauté for 3–4 minutes until soft.
  • Add the chopped carrot and butternut squash to the pot, and cook for an additional 5 minutes, stirring occasionally.
  • Add the apple, cumin, ginger, and turmeric, and stir to combine, cook for 1–2 minutes.
  • Pour in the vegetable broth, bring the soup to a boil, then reduce the heat to a simmer.
  • Let the soup simmer for about 20–25 minutes, or until the butternut squash and carrots are tender.
  • Once the vegetables are soft, blend the soup directly in the pot until smooth and creamy.
  • If the soup is too thick, you can add more vegetable broth or water to get the consistency you want.
  • Serve warm, garnished with fresh parsley or cilantro for added color and freshness and add a squeeze of lemon juice.
